In a medium pot, add chicken breasts, onion, carrot, bay leaves, water and boil until chicken is cooked.

Cut the cooked chicken in bite size pieces and set aside.

Slice onion and carrots thinly.

Cut bell pepper in small size.

In a fry pan, cook onion, carrots and bell peppers until soft.

Dice pickles in small pieces.

Chop fresh dill.

In a mixing bowl, add chicken, cooked vegetable, pickles, fresh dill, mayonnaise, dijon mustard and mix until well incorporated.

Salt and pepper to taste.

Plate the salad.
