The dish combines soft potato gnocchi with a vibrant tomato sauce and melted cheese, creating a delightful blend of flavors and textures. It is often served as a family meal, especially on Sundays or during festive occasions, and has gained popularity beyond Italy, inspiring variations worldwide.

Wash the potatoes and place them in a pot of cold water.
Boil the potatoes until soft, then drain them.
In a saucepan, heat 1/4 cup of extra virgin olive oil over medium heat.
Add 3 cans of San Marzano tomatoes to the saucepan and season with salt.
Remove the garlic from the sauce once it starts boiling and mash the tomatoes with a potato masher or immersion blender to desired consistency.
Let the tomato sauce simmer uncovered on medium-low heat.
Once the potatoes are soft, remove the skins while they are still hot.
Pass the peeled potatoes through a ricer into a bowl.
Add 1 egg, 3 teaspoons of salt, and 3 cups of flour to the potatoes.
Mix the ingredients gently until a dough forms, adding more flour if necessary.
Let the dough rest for a while before shaping the gnocchi.
Divide the dough into pieces and roll each piece into a long rope about 1 inch thick.
Cut the ropes into 1-inch pieces to form the gnocchi.
Roll each piece with your fingers to create a pillow shape and place them on a floured surface to rest.
