1

In a small bowl, whisk together garlic powder, onion powder, paprika, salt, and black pepper to create the seasoning mixture and set aside.

2

Pound the chicken breasts to an even thickness, sprinkle with 2 tbsp of the seasoning mixture, and coat each side evenly. Reserve the remaining seasoning mixture.

3

In a container, mix eggs, buttermilk, and salt, then add the chicken and stir gently. Cover and marinate in the fridge for at least 30 minutes to 1 hour or overnight.

4

Combine flour, cornstarch, and the remaining seasoning mixture in a large resealable bag or bowl. Drizzle 1 tbsp of marinade into the flour mixture, shake well, then add the chicken pieces one at a time, shaking to coat.

5

Dip the chicken back into the marinade, then into the flour mixture again to build a bumpy texture. Let the chicken sit for 1-2 minutes to ensure the flour sticks.

6

In a heavy-duty pot or deep fryer, heat oil to 350 degrees F. Fry the chicken in batches for 8-10 minutes or until golden and cooked through. Drain on a wire rack.

7

In a skillet, melt butter and toast the buns face down until crispy. Spread spicy mayo on both sides of the buns, add pickle slices to the bottom bun, top with chicken, and place the top bun.
