Picarones are a traditional Peruvian dessert, originating from the fusion of Spanish and indigenous culinary practices. These sweet potato doughnuts are often enjoyed during festivals and celebrations, symbolizing the rich agricultural heritage of Peru. Today, they are a popular street food, served with a sweet syrup made from chancaca (raw sugar), and are loved for their unique flavor and texture.

1

Boil 250 grams of camote and 250 grams of zapallo together or separately.

2

In a bowl, combine the boiled camote and zapallo with 200 milliliters of their cooking water and blend until smooth.

3

In a separate bowl, mix 10 grams of baking powder with a teaspoon of sugar and let it activate.

4

Add the blended mixture to the bowl with the activated yeast, along with 40 grams of sugar and 1 tablespoon of anise.

5

Gradually add 500 grams of flour to the mixture until a dough forms.

6

Knead the dough for about 5 to 10 minutes until it reaches the desired texture.

7

Cover the dough and let it rise in a warm place for about 2 hours until it doubles in size.

8

Prepare the syrup by boiling 200 grams of brown sugar with 1 cup of water, cinnamon sticks, cloves, star anise, pineapple, quince, lemon, and orange until it thickens to a caramel-like consistency.

9

Once the syrup is ready, strain it and set aside.

10

Heat oil for frying in a pan.

11

Wet your hands with salted water to handle the dough easily.

12

Shape the dough into rings and fry them in hot oil until golden brown, ensuring not to overcrowd the pan.
