Jocelyn Delk Adams’ Blood-Orange Mimosa Cake

Cream together 1 cup of butter and 1 cup of sugar until fluffy.

Add 4 eggs one at a time, mixing well after each addition.

Sift 2 cups of cake flour and add to the mixture, mixing until combined.

Zest 1 blood orange and add the zest to the batter.

Add 1/2 teaspoon of salt to the batter.

Pour in 1 cup of pink Moscato and mix until fluffy.

Grease and flour a bundt pan, then pour the batter into the pan.

Bake the cake at 315°F until done, about 1 hour.

Prepare the syrup by combining 1/2 cup of blood orange juice and 1/2 cup of sugar in a saucepan over medium-high heat, and let it thicken.

Poke holes in the baked cake and pour the syrup over it to soak in.

Make the icing by whisking together the remaining blood orange juice and confectioner sugar until smooth, then drizzle over the cake.
