Moroccan Tomato Soup with Couscous & Chickpeas

75 grams couscous
4 cloves garlic
1 tin chickpeas
1 tin peeled plum tomatoes
1 tablespoon tomato puree
1/2 lemon
2 onions
1 large carrot
750 ml vegetable stock
salt

Pour couscous into a bowl and season with salt and pepper.

Cover couscous with vegetable stock and set aside with a lid.

Chop the carrot and onions.

Fry the chopped carrots and onions in a frying pan for about 8 minutes until soft.

Add 1 teaspoon of ginger paste and 4 cloves of garlic; cook for another 2 minutes.

Add 1 tablespoon of harissa, 2 tablespoons of ras al hanout, and 1 tablespoon of tomato puree; mix well.

Add the tin of plum tomatoes and mash them down with a spoon.

Add the rinsed and drained chickpeas and the remaining vegetable stock.

Season with salt and pepper, then let it simmer for about 20 minutes until thickened.
