In a small sauce pot on medium heat, add 1/4 cup of sake and 2 tablespoons of mirin. Heat for 1-2 minutes to cook out the alcohol.

Lower the heat slightly and whisk in 1/3 cup of white miso paste and 1/4 cup of sugar until fully dissolved. Remove from heat and let cool to room temperature.

Cut black cod fillets into manageable 3-inch sections.

In an airtight container, add a bit of the marinade to the bottom, then add the black cod pieces and pour in the cooled marinade. Toss gently to coat the fish.

Cover the container with plastic wrap, pressing down on the fish. Refrigerate for a minimum of 2 days, preferably 3 days, to allow the flavors to develop.

After marinating, shred green onions into thirds and use a green onion shredder to separate them. Soak in cooled water for about 5 minutes to curl up.

Preheat the air fryer to 425°F. Spray oil on foil to prevent sticking. Place the marinated black cod in the air fryer and cook for 8-10 minutes until golden brown and slightly charred.
