Mix 1 tablespoon of dry yeast with 1 cup of lukewarm water and 1 cup of warm milk, adding 1 tablespoon of sugar. Let it sit for five minutes.
Add 1/2 cup of vegetable oil, 1 egg white, and 1 tablespoon of salt to the yeast mixture and mix well.
Incorporate 4.5 cups of flour by hand until the dough is tough and crumbly, then knead until soft.
Drizzle some oil over the dough and let it rise at room temperature until doubled in size.
Once risen, turn the dough onto a working board and cut it into eighths.
Fold the pieces and spread feta cheese over them.
Butter a pan and place the dough in it, covering with saran wrap to rise for a second time.
For the topping, mix 1 cup of plain yogurt with 1 egg yolk and 2 tablespoons of buttermilk (made from milk and lemon juice).
Spread the yogurt mixture over the risen dough.
Preheat the oven to 375°F and bake for about 40 minutes until golden brown.
