Wash 1 and 1/4 cups (275 g) of short grain rice in a bowl two or three times to remove dust or debris.

Add the same amount of water to the washed rice and place it in a rice cooker.

Cut 1 kg of thinly sliced beef into bite-sized pieces. If you can't find this cut, freeze a steak for 30 minutes and slice it against the grain.

In a small container, mix 3 tbsp gochujang, 2 tbsp Korean chili pepper flakes, 2 tbsp soy sauce, 2 tbsp oyster sauce, 2 tbsp mirin, 1 tbsp sugar, 2 tbsp minced garlic, 1 tbsp toasted sesame oil, and a few shakes of black pepper to create the marinade.

Pour the marinade over the beef and massage it in. Cover with plastic wrap and refrigerate for at least 10 minutes or overnight.

Prepare the vegetables: Cut 1 large yellow onion into thin strips, slice 3-4 green onions into long strips, julienne about half a carrot, slice shimeji mushrooms, and cut 1 bell pepper into bite-sized pieces.

In a wok, heat 1 tbsp of oil over high heat. Add the onions and green onions, sautéing for about 3 minutes until they start to pick up color.

Add the carrots, mushrooms, and bell pepper to the wok and cook for about 3-4 minutes until softened. Remove the vegetables from the wok.

Place the same wok over high heat, add 1 tbsp of oil, and then add the marinated beef. Cook for about 5 minutes until cooked through.

Add the cooked vegetables back into the wok with the beef and toss together for about 1-2 minutes.

Divide the cooked rice into five containers, top with the beef bulgogi, and garnish with toasted sesame seeds and green onions.
