1 cup red bell pepper
1 cup green bell pepper
1 jalapeño
1 cup cream cheese
1 teaspoon garlic powder
1 tablespoon Tex-Mex seasoning
1 cup shredded Monterey Jack cheese

Combine 1 teaspoon of salt, onion powder, cumin, cayenne pepper, oregano, ground chili, thyme, garlic powder, and 2 teaspoons of ground paprika in a bowl.

Stir in 2 tablespoons of avocado oil.

Pour the marinade over 6 boneless chicken thighs and toss to coat.

Let the chicken marinate for an hour in the fridge.

Cook the marinated chicken in a pot or pan over medium-high heat with a little oil until cooked through.

Let the chicken rest for a few minutes before dicing it into small pieces.

Finely dice 1 cup each of red and green bell pepper and 1 jalapeño.

In a bowl, add 1 cup of room temperature cream cheese, 1 teaspoon of garlic powder, and 1 tablespoon of Tex-Mex seasoning and mix well.

Add the diced peppers to the cream cheese mixture and adjust seasoning with salt and pepper if needed.

Fold in 1 cup of shredded Monterey Jack cheese.

Spread the cheesy mixture over a large flour tortilla, leaving about ½ inch clear around the edge.
