Preheat the oven to 325°F (160°C).
Heat heavy cream in a saucepan over medium heat until just simmering.
Whisk egg yolks and sugar in a bowl until pale and thick.
Remove the cream from heat and gradually pour it into the egg mixture, whisking constantly.
Strain the mixture through a fine sieve into a jug to remove any lumps.
Pour the mixture into ramekins and place them in a baking dish.
Fill the baking dish with hot water halfway up the sides of the ramekins.
Bake for 30-35 minutes until set but still slightly jiggly in the center.
Remove from the water bath and cool to room temperature, then refrigerate for at least 2 hours.
Sprinkle brown sugar evenly over the top of each custard.
Using a kitchen torch, caramelize the sugar until melted and golden brown.
