1 3/4 cups fat-free less sodium chicken broth
1 cup green peas
1 cup potato, diced
1 cup sweet potato, diced
1 cup celery root, diced
1 cup parsnips, diced
1/2 cup pearl onions, chopped
1 lb chicken
1 cup fat-free milk
1/3 cup flour
2 tablespoons parsley, chopped
1/2 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1 package (2 sheets) puff pastry

Boil fat-free less sodium chicken broth in a pot.

Add green peas, potato, sweet potato, celery root, parsnips, and pearl onions to the boiling broth.

Cover and reduce heat, letting it simmer for about 6 minutes.

Add chicken to the pot and cook with the vegetables for about 5 minutes.

Remove chicken and vegetables with a slotted spoon.

Make a slurry from fat-free milk and flour to thicken the broth mixture.
