2 cloves garlic
1.5 tsp honey
½ tsp oregano
½ tsp pepper
½ tsp salt

Dice 5 oz of red onion and 10.5 oz of bell pepper.

Spread the mixture on a baking tray and roast in the oven for 25-30 minutes.

Meanwhile, in a separate bowl, combine 5 oz of couscous with ⅔ cup of boiling water and let it sit for 5 minutes.

After 5 minutes, fluff the couscous with a fork.

In another bowl, mix 3 oz of crumbled feta cheese, ⅓ oz of dill, 4 tbsp of lemon juice, 3 tbsp of olive oil, 2 cloves of minced garlic, 1.5 tsp of honey, ½ tsp of oregano, and season with salt and pepper to taste.

Combine the roasted vegetable and chickpea mixture with the couscous and feta dressing, and toss to combine.
