Avocado oil has a high smoke point and is healthier.

Margarine can reduce saturated fat content.

Heat up a frying pan and add 4 tablespoons of olive oil.

Slice 2 whole bulbs of garlic in half and place them face down in the hot oil to infuse the flavor.

Once the garlic is sizzling and fragrant, add the chicken breasts into the pan.

Slice additional garlic into long thin strips and add them to the pan to toast gently.

Once the chicken is golden and firm, turn it over to cook the other side.

Pour white wine around the chicken (not on top) to avoid losing crispiness and reduce it down.

Add chicken stock around the edge of the pan, again avoiding the skin of the chicken.

Add fresh bay leaves on top for flavor and garnish.

Transfer the pan to the oven to finish cooking and allow the sauce to reduce further.
