1 oz saaz hops

Fill the kettle with 7 gallons of water.

Add half a campden tablet to the water.

Set the kettle to a mash temperature of 150° Fahrenheit.

Mash for 30 minutes.

Add 9 lb of pilsner malt and 1 lb of carapils malt to the kettle.

Taste the mixture after adding the grains.

Remove the malt pipe cap and add the upper filter screen.

Add the recirculation arm and turn on the pump.

Dial back the flow with the valve at the top of the transfer arm.

Split the brew day into two sessions, leaving for the night and returning the next morning.

Elevate the grain basket above the kettle and kick up the temperature to a boil.

Prepare the fermentor by combining 5 gallons of water with 1 oz of star san.

After 10 minutes of draining, remove the grain basket and dump the spent grain into the compost bin.

Clean out the basket after removing the spent grain.

Add first wort hops at a kettle temperature of about 150° Fahrenheit.

Keep the lid on the kettle while heating up to boiling.

Once boiling starts, either remove the lid or crack it open.

Prepare the cold water supply for the chiller using two lengths of garden hose.

With 15 minutes left in the boil, add 1 oz of saaz hops to the hop basket.

With 5 minutes remaining, add the rest of the saaz hops to the hop basket.

After the timer expires, add the chiller.
