Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly butter it.
In a mixing bowl, beat 1 cup (225 grams) of unsalted butter until smooth.
Add 1.5 cups (300 grams) of granulated sugar and 1 teaspoon (4 grams) of vanilla extract to the butter and beat until mixed.
Scrape down the sides of the bowl to ensure everything is combined.
Add 2 large eggs (100 grams), one at a time, mixing well after each addition.
In a separate bowl, whisk together 2.75 cups (355 grams) of all-purpose flour, 2 teaspoons (8 grams) of cream of tartar, 1 teaspoon (4 grams) of baking soda, and 0.5 teaspoon (2 grams) of salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed to avoid flour dust.
If the batter is too soft, cover and refrigerate until firm, otherwise proceed to the next step.
In a small bowl, mix 0.25 cup (50 grams) of granulated sugar with 2 teaspoons (4 grams) of ground cinnamon for rolling.
Roll the dough into 2-inch (5 cm) balls, approximately 40 grams each, or 1-inch (2.5 cm) balls for smaller cookies.
Place about 5-6 cookie balls on the baking sheet, leaving space between them.
Flatten each cookie ball with a glass to about 3 inches (7.5 cm) wide and 0.25 inches (0.5 cm) thick.
Bake in the preheated oven for 7-9 minutes, until the edges are firm but the centers are soft.
Rotate the baking sheet halfway through baking for even cooking.
Remove from the oven and let cool on the baking sheet for a couple of minutes before transferring to a wire rack to cool completely.
