Coq au Vin

Cultural Context

Coq au Vin is a traditional French dish that dates back to ancient times, often associated with rural cooking. It showcases the French culinary technique of braising, where meat is cooked slowly in liquid, allowing flavors to meld beautifully. The dish is typically made with rooster, but chicken is commonly used today. It reflects the French love for wine and hearty, rustic meals, often enjoyed during family gatherings or special occasions.

1

Remove the skin from chicken legs and thighs.

2

Dredge chicken pieces in flour seasoned with salt and pepper.

3

Set dredged chicken on a plate with paper towel and set aside.

4

In a large skillet, heat 1-2 tablespoons of butter and a couple tablespoons of avocado oil.

5

Brown the chicken in the skillet for about 3-4 minutes per side until golden.

6

Remove browned chicken and set aside on a plate or baking dish.

7

Transfer the remaining flavor from the skillet to a Dutch oven.

8

On medium-low heat, add half a cup of diced pancetta to the Dutch oven and sauté for about 10 minutes.

9

Add about a pound of peeled pearl onions to the pancetta and caramelize them.

10

Add a few splashes of cognac for flavor.

11

Add about 2 cups of quartered white mushrooms and a couple pinches of salt to help them sweat out.

12

Mix well and cook until combined.

13

Add 4 cloves of garlic and cook until fragrant.

14

Pour in 3 cups of good red wine and stir well.

15

Add one can of chicken broth to the mixture and mix thoroughly.

16

Add 2 teaspoons of salt, 2 teaspoons of pepper, 2 teaspoons of thyme, and 2 bay leaves.

17

Bring the mixture to a boil and mix in all the seasonings.

18

Add the chicken pieces to the pot, ensuring they are covered with the wine mixture.

19

Cover the pot with a lid and place it in the oven at 350 degrees.

20

Cook for between 1 hour to 1.5 hours until the chicken is falling off the bone.
