Gather ingredients and prepare to use a stand mixer.
Measure and add 3 cups of Bob's Red Mill 1-to-1 gluten-free baking flour into the stand mixer bowl, leveling it off with a knife.
Add 1 teaspoon of salt to the flour in the mixer.
Make a small hole in the flour and add 1 teaspoon of rapid yeast and 3/4 teaspoon of rapid yeast into that hole.
Warm 1 and 1/4 cups of milk in the microwave for about 1 minute and 30 seconds, checking the temperature to ensure it is between 100°F and 115°F.
If the milk is too hot (over 115°F), let it cool down before using it to avoid killing the yeast.
Once the milk is at the correct temperature, pour it over the yeast in the flour mixture.
Add softened butter to the mixture.
Crack 2 room temperature eggs into the mixture, ensuring no shells get in.
Add 1/2 cup of honey to the mixture, ensuring to get every last drop.
Add 1 teaspoon of apple cider vinegar to the mixture.
Attach the dough hook to the stand mixer and mix on medium speed for 3 minutes until the dough is sticky.
Check the dough after mixing; it should be sticky but well combined.
