Butternut squash provides a similar sweetness and texture.

In a pot, heat coconut oil with scallions, thyme, pimento seeds, and garlic for about 2 minutes.

Add salt and black pepper to the pot.

Add less than 1 pound of pumpkin to the pot and toss to combine.

Add 2 and 1/2 cups of coconut milk mixed with water to the pot.

Cover the pot and bring to a boil to cook the pumpkin.

Once the pumpkin is halfway cooked, mash some of it in the pot to give the rice a nice color.

Add washed white rice to the pot.

Add frozen vegetables (optional) to the pot.

Fluff the rice once cooked.
