2 slices natural or processed cheese
1/8 teaspoon mushroom seasoning powder (optional)
1 teaspoon plain flour
4 slices wholemeal bread
1/3 cup milk
1 tablespoon olive oil
1 teaspoon butter (for brushing)
salt and pepper to taste

Heat a frying pan on medium heat and add 1 tablespoon of olive oil.

Once the oil is hot, add 1 cup of sliced Swiss brown mushrooms and spread them around the pan without stirring for 1 minute.

After 1 minute, stir fry the mushrooms until they are reduced and slightly golden in color.

Add 1/8 teaspoon of mushroom seasoning powder (or any seasoning/salt) to the mushrooms.

Add 1 teaspoon of plain flour to the mushrooms and stir it through.

Pour in 1/3 cup of milk and stir until the mixture thickens.

Once thickened, add 1/4 cup of chopped parsley (or substitute with herbs/baby spinach or omit).

Remove the mixture from heat once the parsley has wilted slightly and set aside.

Butter the surface of a small grill pan or sandwich press with 1 teaspoon of butter.

Place the first slice of wholemeal bread on the grill.

Add some of the mushroom filling on top of the bread slice, followed by slices of cherry tomatoes and then a slice of cheese.

Cover with a second slice of bread and grill until the bottom is golden brown, then turn over and grill the other side, pressing lightly to melt the cheese and seal the sandwich.

Repeat the process with the next sandwich.

Slice the sandwiches diagonally and serve hot.
