Grill eggplant slices in a pan with olive oil for 2-3 minutes, turning them over halfway through.

Season grilled eggplant with a little salt and pepper.

Assemble the sandwich with one slice of bread butter-side up, add grilled eggplant, and top with gouda cheese and another slice of bread butter-side down.

Heat a non-stick pan over low heat, just above simmer.

Place the sandwich in the pan and cook for about 2 minutes, pressing down occasionally.

Flip the sandwich to check the other side and cook for another minute, continuing to press down.

Flip the sandwich 2-3 times until the cheese is melted and the bread is golden brown.

Remove from the pan and serve immediately.
