Rainbow Pad Thai

Soak the brown rice noodles in warm water for about 30 minutes or until softened, then drain.
In a large skillet or wok, heat the vegetable oil over medium heat.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the soaked brown rice noodles to the skillet and stir-fry for 2-3 minutes.
Add the fish sauce, lime juice, and brown sugar, stirring to combine.
Add the shredded carrots and bell peppers, and continue to stir-fry for another 3-4 minutes until the vegetables are tender-crisp.
Stir in the bean sprouts and sambal oelek, cooking for an additional minute.
Remove from heat and garnish with chopped green onions and crushed peanuts.
If desired, sprinkle with red pepper flakes for added spice.
Serve immediately and enjoy your colorful Rainbow Pad Thai!
