Cut the tomatoes into 1/4 inch (6 mm) slices.
Place the sliced tomatoes on paper towels to drain for about 15-20 minutes.
In a bowl, mix together 4 tbsp cream cheese and 1 tsp Dijon mustard.
Add 1 minced garlic clove and 3 tbsp chopped fresh basil to the cheese mixture.
Roll the puff pastry dough into a rectangle of 12x14 inches (30x35 cm).
Prick the pastry with a fork, leaving about a 1 inch (2.5 cm) border.
Spread the cheese mixture evenly over the pastry.
Layer the drained tomato slices on top of the cheese mixture.
Sprinkle 1 cup grated Mozzarella cheese over the tomatoes.
Sprinkle 1/4 cup grated Parmesan cheese on top.
Add freshly ground black pepper to taste.
Bake at 400°F (200°C) for about 20 to 25 minutes, until the crust is golden, cheese is melted, and tomatoes are cooked.
Sprinkle fresh basil on top and serve warm.
