1

Trim excess fat and cartilage off chicken thighs, leaving them intact for even cooking.

2

Season chicken thighs with all-purpose seasoning, chicken bouillon, Cajun seasoning, and paprika. Mix well and refrigerate for 30 minutes.

3

Slice Andouille sausage into half-moon pieces to match the size of the chicken.

4

Dice onion, celery, red bell pepper, and green bell pepper into uniform pieces. Also dice green onion and garlic.

5

Heat avocado oil in a pot over medium to medium-low heat. Add sliced sausage and cook until fat renders and sausage is browned.

6

Remove sausage from pot using a slotted spoon and set aside.

7

Sear seasoned chicken thighs in the rendered sausage fat until browned.

8

Add tomato paste to the pot with the Cajun trinity (onion, celery, bell peppers) and mix well.

9

Scrape up fond from the bottom of the pot as the vegetables cook down for 3 to 4 minutes.

10

Add minced garlic and cook for an additional minute or two.

11

Stir in dried herbs and allow them to bloom in the oil.

12

Add 2 cups of long grain rice to the pot and toast for 1 to 2 minutes, stirring frequently.
