Honey is a natural sweetener with unique flavor.
In a large bowl, add 3.5 cups of all-purpose flour.
Add 1/2 cup of dry coconut powder.
Add 2 tablespoons of butter and 2 tablespoons of shortening.
Add 2 tablespoons of baking powder and 0.5 tablespoons of salt.
Pour in 1.5 cups of coconut milk.
Blend all the ingredients together using a pastry cutter, then switch to using hands to knead the dough.
Knead the dough for 5 minutes or until smooth, sprinkling flour on the kneading surface as needed.
Form the dough into 4 logs and cut them into desired sizes for the johnnycakes.
Roll all the pieces into round shapes and cover with a cloth.
Preheat the oven to 425 degrees Fahrenheit.
Once the oven is heated, flatten each piece of dough with the palm of your hand.
Use a fork to poke the dough for decoration purposes only.
Bake at 425 degrees Fahrenheit for 18 minutes.
Add creamy whipped butter to hot johnny cakes before serving.
