Chorizo provides similar spice and flavor at a lower cost.

Heat olive oil in a large pan over medium heat.

Add diced shallot and diced fennel; cook for a few minutes until soft.

Stir in sliced sweet piquillo peppers and ’nduja; cook for another minute.

Add orzo pasta and stir to coat in the mixture.

Pour in water and cook the orzo for 6–8 minutes until al dente.

Add fresh clams on top of the orzo, cover the pan, and cook for about 2 minutes until clams open.

Add the zest of half a lemon and finish with chopped parsley.
