Pino Luongo Spaghetti alla Rustica

Boil almost a quart of water in a large pot.

Add 100 g of spaghetti to the boiling water, allowing it to tumble in.

Stir the spaghetti gently with your hand or tongs to prevent sticking.

Slice half an onion very thinly and set aside.

In a separate pan, add 1 tablespoon of butter and a swirl of olive oil.

Caramelize the sliced onions in the pan over medium heat, reducing the heat slightly to avoid burning.

Once the onions are soft and fragrant, add canned Italian tomatoes, crushing them slightly as you add them.

Combine the tomatoes with the caramelized onions, ensuring the sauce surrounds the onions.

Transfer the cooked spaghetti directly from the pot to the pan with the sauce, allowing some pasta water to mix in.

Toss the spaghetti in the sauce, ensuring it cooks together for a few minutes to absorb the flavors.

Finish the dish with a drizzle of olive oil before serving.
