Add 1/2 to 1/4 cup of sugar and 2 to 3 tablespoons of salt to the mixture.
Optionally add spices like coriander seed, fennel seed, and mustard seed.
Bring the mixture to a boil and taste it to adjust flavors.
Pour the boiling pickling liquid over the vegetables in a jar.
Let the vegetables cool before sealing the jar and refrigerating them.
