Preheat the oven to 400 degrees.
Place 3 pounds of Yukon Gold potatoes into a dry cookie tray.
Tightly wrap the potatoes in tin foil to retain moisture while roasting.
Roast the potatoes in the oven for about 60 minutes.
After 20 minutes, add 5 cloves of garlic wrapped in foil to the oven to roast alongside the potatoes.
Remove the potatoes and garlic from the oven after 60 minutes; the potatoes should have some browning.
Unwrap the garlic and coarsely chop it, then add it to the bowl with the potatoes.
Using a potato masher, coarsely mash the potatoes with the garlic.
Add 2 sticks of room temperature salted butter to the potatoes and mash it in.
Pour in 1 cup of room temperature whole milk and mash again until fluffy.
Add 3 tablespoons of chopped chives, a couple turns of fresh cracked black pepper, and a couple pinches of sea salt; stir to mix evenly.
Serve the mashed potatoes in a bowl, optionally drizzling with gravy or balsamic glaze.
