250 ml Beef stock

Add to a marinating dish the chicken quarters together with garlic, red wine and fresh thyme. Marinate this for 2 hours.

Cut the shallots vertical in half and cook these on the flat side. Set them aside.

Cook the mushrooms and put them aside.

Cut the bacon and cook this. Set it aside.

Cook the chicken quarters and set these aside.

First put the shallots, mushrooms and bacon in the pan with on top the chicken quarters. Add the marinade also in the pan. Simmer this on medium low heat for 2 hours.

Take the chicken quarters out for a moment.

Add a bit of the liquid in the pan with the heavy cream. Mix this and add to the pan. Mix this well. Add the chicken quarters back in. Let this simmer for 10 minutes without the lid on.

Serve the coq au vin with puree / mashed potatoes. Garnish with some parsley.
