Cut both ends off the potatoes to make them stand up, then slice into half-inch slabs and cut into half-inch cubes.
Rinse the potato cubes and boil them in salted water for about 5-10 minutes until softened.
Cut 4 slices of Smithfield bacon into chunks and fry them in a medium heat cast iron skillet until browned.
Remove the bacon from the skillet and let it drain on a paper towel, saving the bacon grease for later use.
Drain the boiled potatoes and run them under cold water, then spread them out on a paper towel-lined cookie sheet to dry.
In the cast iron skillet with bacon grease, add one chopped onion and half of a yellow and red bell pepper, cooking until softened.
In a separate non-stick frying pan, scramble 6 whole eggs with salt, pepper, and heavy whipping cream, stirring gently to prevent sticking.
Once the eggs are cooked, set them aside and return to the skillet with the onions and peppers.
Add the parboiled potatoes back into the skillet and brown them in a mixture of 2 tablespoons of butter and 2 tablespoons of olive oil, seasoning with salt and pepper.
Once the potatoes are browned, add the cooked bacon, scrambled eggs, and mix everything together.
Spread the mixture out in the skillet and top with cheddar and mozzarella cheese, covering to melt the cheese.
Serve directly from the cast iron skillet.
