Preheat the oven to 375°F (190°C).
Cook 8 slices of bacon in a skillet with a little oil until crispy, then drain on paper towels.
Chop half a red pepper and half a green pepper into small cubes.
In a bowl, whisk together 5 eggs, salt, and black pepper to taste.
Add the chopped peppers and about 1 tablespoon of chopped green onions to the egg mixture and stir.
Check the bacon, then remove it from the skillet and drain the grease, leaving a little for cooking the eggs.
Pour the egg mixture into the skillet and scramble over medium heat until just cooked, being careful not to overcook.
Prepare a baking sheet with parchment paper.
Open the Pillsbury Crescent Roll dough and separate it into 8 triangles, arranging them in a star pattern on the baking sheet.
Lay a strip of bacon along each triangle of dough.
Sprinkle half of the 1 cup of cheddar cheese along the middle of the ring formed by the dough triangles.
Spoon the scrambled egg mixture on top of the cheese in the center of the ring.
Sprinkle the remaining half of the cheddar cheese on top of the egg mixture.
Fold the bacon and dough over the filling, pinching to seal and create a ring shape.
Bake in the preheated oven for 20-25 minutes until golden brown.
