Measure and place 2 cups of plain greek yogurt into a bowl.
Add 1 teaspoon of vanilla extract to the yogurt.
Add a pinch of salt to the yogurt mixture.
Add liquid stevia to the yogurt mixture, about five drops, or adjust according to sweetness preference.
Zest the orange into the yogurt mixture using a cheese grater and mix until well combined.
Set the yogurt mixture aside and prepare the fruit toppings.
Remove the stems from the strawberries and slice them thinly.
Decide to leave the blueberries whole but mention they can be cut in half if desired.
Prepare a tray and cut a piece of wax paper large enough to cover it, then place it in the tray.
Spread the yogurt mixture evenly over the wax paper in the tray, ensuring even thickness.
Add sliced strawberries on top of the yogurt layer.
Add blueberries on top of the yogurt layer, pressing them slightly into the yogurt.
Sprinkle sugar-free granola over the fruit layer.
Drizzle honey over the entire bark.
Place the tray into the freezer for about 3-4 hours to freeze.
After 4 hours, check that the bark is completely frozen by tapping on it with a spatula.
Carefully remove the bark from the tray using a spatula and peel off the wax paper.
Place the bark on a cutting board and cut it into pieces as desired.
Taste the bark and describe it as refreshing and delicious, highlighting the orange flavor.
