Sear shallots in hot oil until slightly caramelized at the edges.

After 1.5 hours, check the beef for tenderness and remove bones if they fall out easily.

Nestle the caramelized shallots and potatoes into the roasting tin with the beef.

Cover again with baking paper and foil, and roast for another 30 minutes until potatoes are tender.

Remove from oven and soak up excess oil from the sauce with paper towel.
