Cut onion and potato into pieces.

In a pot, add 150 g masman curry paste and 800 ml coconut milk, and reduce the coconut milk as shown.

Add 200 ml of coconut milk and 250 ml of water to the pot.

Add chicken drumsticks to the pot.

Add 1 tbsp sugar and half of the palm sugar (35 g).

Add 6 tbsp fish sauce and bring to a medium-low heat, cooking for 20 minutes.

After 20 minutes, add 100 ml of coconut milk to the pot.

Add potato and 150 ml of water, then cook for a further 10 minutes.

After 10 minutes, add onion to the pot.

Add remaining 100 ml of coconut milk, 25 g roasted peanuts, and 100 ml of water.

Add 4 tbsp tamarind juice and the remaining palm sugar (35 g).

Cook for another 5 minutes.
