Line a baking sheet with parchment paper and place it in the freezer.
Mix vegan butter with corn syrup or golden syrup until smooth.
Add soy milk or your choice of plant milk, vanilla extract, and half of the icing sugar; stir to combine.
Add the remaining icing sugar and beat until stiff; do not add more liquid.
Take out about a third of the cream and place it in another bowl; add turmeric for color (or vegan yellow food coloring).
Place both bowls of cream into the freezer for about 10 minutes to firm up.
Scoop out a tablespoon of the white filling and place it on the chilled baking tray; repeat with the rest of the white filling.
Roll the white filling into balls and press your thumb into the middle to make room for the yolks.
If the mixture gets too sticky, put the tray in the freezer to firm up for a few minutes.
Scoop out a teaspoon of yellow cream and place it in the center of each white ball.
Chill the filled balls in the freezer for a few minutes to harden them up.
Roll the balls again to create egg shapes or spheres.
Freeze the shaped eggs for 15 to 20 minutes until seriously chilled.
Melt the chocolate chips in the microwave, checking every 30 seconds to avoid overheating.
Remove the frozen cream eggs and coat them with warm melted chocolate using a spoon.
Place the coated eggs back on the parchment sheet to set up.
Return the truffles to the freezer for a few minutes to harden up.
