Mix together the Larry seasoning, complete seasoning, herbs de Provence or Italian seasoning, smoked paprika, and black pepper in a plate until well combined.
Drizzle olive oil over the chicken breasts, including inside the pockets, and rub it in thoroughly.
Season both sides of the chicken breasts with the mixed seasonings, ensuring to rub it in well and add some inside the pockets without over-seasoning.
Chop the broccoli into fine pieces and set aside.
In a large bowl, add the cream cheese and stir until creamy.
Add the ranch seasoning packet, black pepper, diced onions, and minced garlic to the cream cheese and mix until well combined.
Add the chopped broccoli and shredded cheddar cheese to the mixture and stir until smooth and creamy.
Stuff each chicken breast pocket with the cream cheese filling, packing it in well but not overfilling to prevent leakage.
Use toothpicks to seal the ends of the stuffed chicken breasts if desired.
Heat a generous amount of oil in a skillet over medium to high heat.
Carefully add the stuffed chicken breasts to the skillet, cooking until golden brown and crispy, about 5 minutes per side.
Flip the chicken breasts upright to prevent stuffing from spilling out and cook for an additional minute.
Transfer the chicken breasts to a preheated oven at 350°F (175°C) and bake for 15 to 20 minutes until the internal temperature reaches 165°F (74°C).
