Preheat the oven to 375°F (190°C).

Season the pork loin with salt, black pepper, and rub with olive oil.

Heat a skillet over medium heat and add butter until melted.

Sear the pork loin on all sides until golden brown, about 3-4 minutes per side.

Remove the pork from the skillet and set aside.

In the same skillet, add chopped onions and garlic; sauté until translucent, about 5 minutes.

Add chopped apples and pears; cook until slightly softened, about 3-4 minutes.

Stir in honey, chicken broth, and white wine; bring to a simmer.

Add fresh thyme, rosemary, bay leaves, cinnamon, and nutmeg; mix well.

Place the seared pork loin in a roasting pan and pour the fruit mixture over it.

Cover the pan with foil and roast in the preheated oven for 45 minutes.

Remove the foil and continue roasting for an additional 15-20 minutes until the pork reaches an internal temperature of 145°F (63°C).

Let the pork rest for 10 minutes before slicing.

Serve the sliced pork with the fruit sauce spooned over the top.
