Tabouna Bread

1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon dry yeast
50 ml pure olive oil
1 cup warm water
Dash of milk (optional)

Add the flour and semolina in a large bowl.

Add salt, sugar, and yeast to the bowl.

Put the yeast in a mug, add a drop of warm water, and mix well.

Add a dash of milk to the yeast mixture.

Pour the yeast mixture into the bowl with flour and semolina.

Add 1 cup of warm water and 50 ml of olive oil to the bowl.

Mix well, either in a mixer or by hand.

Cover the bowl with cling film and a tea towel to rise for around 1-2 hours.

After 2 hours, oil a baking tray.

Flour the work surface for kneading the bread.

Knead the dough by folding it back onto itself and end with forming a ball.

Place the dough on the tray and push it out using your fingers and the base of your hand.

Push down and out, using the tips of your fingers to shape the dough.

Optionally, draw lines in a criss-cross pattern or prick with a fork.

Optionally, add seeds on top of the dough.

Place the tray in the oven at 200°C for 15 minutes.

Turn down the oven to 150°C for a further 15-20 minutes.
