Boil potatoes until tender, about 15-20 minutes.

Drain and mash the potatoes until smooth.

In a skillet, melt butter over medium heat and sauté chopped onion until translucent, about 5 minutes.

Add flour to the skillet and cook for 2-3 minutes, stirring constantly.

Gradually whisk in milk until the mixture thickens, about 5 minutes.

Stir in mashed potatoes, ham, cheese, parsley, salt, pepper, and nutmeg until well combined.

Remove from heat and let the mixture cool completely.

Once cool, shape the mixture into small balls or patties.

Dip each croquette in beaten eggs, then coat with bread crumbs.

Heat olive oil in a deep skillet over medium-high heat until shimmering.

Fry croquettes in batches until golden brown, about 3-4 minutes per side.

Remove croquettes and drain on paper towels.

Serve warm with lemon juice drizzled on top.
