Peel the onion but do not cut off the end; cut the onion in half to avoid crying while chopping.
Finely chop the onion using a rolling motion with the knife.
Heat a nonstick polished cast iron skillet over gas heat.
Add 2 tablespoons of oil to the skillet and coat the pan with it.
Sauté the chopped onion in the skillet until they start to soften and become fragrant.
Add 3 cloves of minced garlic to the skillet and cook briefly until fragrant.
Add chili powder, cumin, paprika, and coriander to the skillet to bloom the spices for a few minutes.
Transfer the onion and spice mixture to a crock pot.
Add 2 lbs of ground beef to the skillet, pre-crumbled by hand, and brown it while chopping it further with a tool.
Once browned, drain excess grease from the ground beef using a paper towel.
Add the drained ground beef to the crock pot and mix well with the other ingredients.
Add 2 cans of Rotel tomatoes and green chilies to the crock pot.
Add 1 big can of tomato sauce to the crock pot.
Pour in 0.5 cup of beef broth, adjusting for desired thickness of the chili.
