Nutritional yeast is lower in calories and dairy-free.
Warm up a pan on medium heat and add about 4-5 tablespoons of extra virgin olive oil.
Add 1 tablespoon of water to the oil to prevent the garlic from burning.
Crush 3 cloves of garlic and add them to the oil, sautéing for about 30 seconds until fragrant.
Chop the chilies into small pieces and add them to the pan with the garlic.
Sauté the garlic and chili together gently, allowing the aromas to develop.
Add the 800 grams of peeled tomatoes to the pan and let them cook on medium heat for about 15 minutes, stirring occasionally.
After 5 minutes, squash the peeled tomatoes to release their juice.
Boil 300 grams of penne pasta according to package instructions (about 10 minutes), stirring twice to prevent sticking.
Once the pasta is ready, add salt and pepper generously to the sauce, along with chopped parsley.
Drain the pasta but reserve some pasta water, then add the pasta to the sauce and toss gently to combine, adding pasta water as needed for consistency.
Plate the pasta and finish with grated pecorino cheese and additional parsley.
