In a deep bowl, add the flour. Then add the mahlep, sugar, salt, yeast, warm water, and oil. Mix everything thoroughly until you obtain a dough that is smooth and no longer sticky to your hands.

Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rise in a warm place for about 1 hour.

Once the dough has risen, divide it into 7 equal pieces. Roll each piece out into a long strip. Arrange these strips side by side and braid or intertwine them into a traditional pattern.

Place the braided dough on a baking tray and let it proof for another 30 minutes.

In a small bowl, mix the egg yolk with the pekmez. Brush this mixture evenly over the dough. Then, sprinkle the sesame seeds on top.

Preheat your oven to 200°C (392°F). Bake the bread for about 25 minutes. Depending on your oven, it may take up to 35 minutes, so keep an eye on it and check for doneness.
