Rinse and drain the spinach leaves.
Chop the spinach roughly using a large chef's knife.
Peel the onion and chop it finely.
Remove the peel from the garlic and crush the garlic clove.
Melt the butter in a skillet over medium-high heat.
Add the chopped onion and sauté in butter until golden.
Add the crushed garlic and continue frying for about a minute.
Pour the milk into a glass and add flour, whisking it in the milk.
Immediately pour the milk mixture into the skillet and stir well to prevent lumping.
Season the mixture with salt and pepper, and add some nutmeg.
Stir in the spinach leaves and cover the skillet.
Simmer gently for ten minutes.
Transfer the sauce to a blender and add vinegar before mixing.
Blend the sauce for a minute.
Serve the sauce on a plate alongside classic Czech potatoes cooked with caraway seeds, drizzled with melted butter, and add a halved hard-boiled egg, garnished with a sprig of green herbs.
