Peel and chop the fish. Put into a suitable dish.

Make a brine: water, salt, sugar, allspice, bay leaf, cloves, soy sauce, apple cider vinegar and dried ginger. Bring to the boil and cool to room temperature.

Pour over the fish. Marinate in a cold place for 2 days.

Cut onion and lemon in half rings.

Drain the brine and layer the fish, onion, lemon, dill and a little olive oil.
