Ingredients

  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1 cup cooked chicken, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. 1Heat olive oil in a large skillet over medium-high heat.
  2. 2Add minced garlic and ginger, sauté for 1 minute until fragrant.
  3. 3Add the mixed vegetables to the skillet and stir-fry for 3-4 minutes until they are tender-crisp.
  4. 4Add the cooked chicken to the skillet and stir to combine with the vegetables.
  5. 5Pour soy sauce over the mixture and stir well to coat everything evenly.
  6. 6Add black pepper and red pepper flakes (if using) and stir-fry for another 2 minutes.
  7. 7Remove from heat and garnish with chopped green onions and sesame seeds.
  8. 8Serve hot over rice or noodles if desired.

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups fresh spinach
  • 1 tbsp olive oil

Instructions

  1. 1Heat olive oil in a large pot over medium heat.
  2. 2Add diced onion, carrots, and celery; sauté for about 5 minutes until softened.
  3. 3Stir in minced garlic, thyme, oregano, salt, and pepper; cook for another minute.
  4. 4Add the chicken breasts and chicken broth to the pot; bring to a boil.
  5. 5Reduce heat and let simmer for 20 minutes, or until the chicken is cooked through.
  6. 6Remove the chicken from the pot and shred it with two forks.
  7. 7Return the shredded chicken to the pot along with the white beans and spinach.
  8. 8Simmer for an additional 5 minutes until the spinach is wilted and everything is heated through.
  9. 9Taste and adjust seasoning if necessary before serving.
