This sandwich is inspired by coastal cuisine, often featuring fresh fish and simple ingredients.

Ingredients

  • 2 fillets North Atlantic cod (about 6 oz each)
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 cup breadcrumbs
  • 1/2 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 4 slices of bread (your choice)
  • Lettuce leaves
  • Tomato slices
  • Pickles (optional)
  • Oil for frying

Instructions

  1. 1Rinse the cod fillets under cold water and pat them dry with paper towels.
  2. 2In a shallow dish, mix the flour, salt, black pepper, and paprika together.
  3. 3Dredge each cod fillet in the flour mixture, shaking off any excess flour.
  4. 4In another shallow dish, place the breadcrumbs.
  5. 5Dip the floured cod fillets into the breadcrumbs, pressing gently to adhere the crumbs to the fish.
  6. 6Heat oil in a large skillet over medium heat. Once hot, carefully add the breaded cod fillets.
  7. 7Cook the fillets for about 4-5 minutes on each side, or until golden brown and cooked through.
  8. 8While the fish is cooking, mix the mayonnaise, lemon juice, and Dijon mustard in a small bowl to create a sauce.
  9. 9Toast the bread slices lightly in a toaster or on a skillet.
  10. 10Assemble the sandwich by spreading the sauce on one side of each slice of bread, adding lettuce, tomato, and pickles if desired, then placing the cooked cod fillet on top.
  11. 11Top with the other slice of bread, cut in half, and serve immediately.
