- ●2 fillets North Atlantic cod (about 6 oz each)

Instructions
- 1Rinse the cod fillets under cold water and pat them dry with paper towels.
- 2In a shallow dish, mix the flour, salt, black pepper, and paprika together.
- 3Dredge each cod fillet in the flour mixture, shaking off any excess flour.
- 4In another shallow dish, place the breadcrumbs.
- 5Dip the floured cod fillets into the breadcrumbs, pressing gently to adhere the crumbs to the fish.
- 6Heat oil in a large skillet over medium heat. Once hot, carefully add the breaded cod fillets.
- 7Cook the fillets for about 4-5 minutes on each side, or until golden brown and cooked through.
- 8While the fish is cooking, mix the mayonnaise, lemon juice, and Dijon mustard in a small bowl to create a sauce.
- 9Toast the bread slices lightly in a toaster or on a skillet.
- 10Assemble the sandwich by spreading the sauce on one side of each slice of bread, adding lettuce, tomato, and pickles if desired, then placing the cooked cod fillet on top.
- 11Top with the other slice of bread, cut in half, and serve immediately.

- 7Heat vegetable oil in a large skillet over medium-high heat until shimmering.
- 8Carefully add the fillets to the skillet, cooking for 3-4 minutes per side until golden brown and cooked through.
- 9Remove the fillets from the skillet and drain on paper towels.
- 10Toast the hamburger buns in the skillet until lightly browned.
- 11Assemble the sandwiches by placing a walleye fillet on the bottom half of each bun.
- 12Top with lettuce, tomato slices, and a generous dollop of tartar sauce.
- 13Add the top half of the bun and serve with lemon wedges on the side.
