Cacao Banana Bread

2 tbsp ground flaxseed
1/4 cup water
2 cups almond flour
2 tbsp monk fruit sugar
1/4 cup Earth Echo Cacao Bliss
1 tsp baking powder
2 large ripe bananas
1/3 cup coconut oil
1 tsp vanilla extract
additional ripe banana
slivered almonds

Preheat the oven to 350°F.

In a small bowl, mix ground flaxseed with water and let it sit for a few minutes to thicken.

In a large mixing bowl, combine almond flour, monk fruit sugar, cacao bliss, and baking powder.

Add the thickened flaxseed mixture, mashed ripe bananas, melted coconut oil, and vanilla extract to the dry ingredients. Mix until well combined.

Pour the batter into an 8x3 loaf pan and top with additional sliced banana and slivered almonds.

Bake for 45-50 minutes or until a toothpick inserted comes out clean.
