Njugu Karanga Githeri

This hearty meal is often enjoyed during communal gatherings and celebrations, symbolizing unity and sharing. Shallots have a milder flavor.
Heat the pan and add oil.
Once the oil is heated, add finely chopped onions and cook until soft.
Add minced garlic and cook for a couple of seconds.
Add turmeric and coriander powder, roast for a couple of seconds.
Add chopped tomatoes and salt, cook until tomatoes are soft.
Add boiled sweet corn, boiled kidney beans, boiled peas, and boiled yam, mix well and sauté for a couple of minutes.
Add water from the kidney beans or regular water/vegetable stock, taste for salt and spices.
Cover and let it simmer until the stock thickens.
Add amaranth leaves and mix well after simmering.
Check the consistency, it should be like a stew.
