Bring a 4-quart pot of water to a boil.

Rinse 1 cup of brown rice under cold water to remove excess starch.

Add the rinsed rice to the boiling water and stir.

Reduce heat slightly to maintain a steady boil and set a timer for 30 minutes.

Cut 1 lb of organic chicken tenders into bite-sized chunks and transfer to a bowl.

Add 2 tsp of Primal Kitchen avocado oil to the chicken and season with 1.5 tsp smoked paprika, 1.5 tsp garlic powder, 1 tsp onion powder, sea salt, and black pepper. Toss to coat.

Heat a 12-inch non-stick skillet over medium heat and add a little avocado oil.

Once the oil is shimmering, add the chicken in a single layer.

Cook the chicken for 3-4 minutes until golden brown, then flip and cook for another 3-4 minutes until golden brown and cooked through.

Pour in about 0.5 cup of Primal Kitchen buffalo sauce and let it sit while finishing the rice.

After 30 minutes, add 1.5 cups of defrosted cauliflower rice to the pot with the brown rice and let it finish cooking for another 5 minutes.

Drain the rice and return it to the pot, stirring in a handful of chopped scallions and covering it to let it sit.

Bring a couple of inches of water to a boil in another pot and place a steamer basket on top.

Add 1 lb of trimmed green beans cut into 1-inch pieces to the steamer basket, cover, and cook for 5-7 minutes until vibrant and tender but still crisp.

Transfer the green beans to a bowl, add a couple of cloves of crushed garlic, a drizzle of avocado oil, and a handful of chopped baby tomatoes. Season with salt and pepper and stir to combine.

Divide the rice, buffalo chicken, green beans, and tomatoes into four containers, starting with the rice, then the chicken, followed by the green beans and tomatoes.

Drizzle Primal Kitchen ranch dressing over the top of each bowl.
